Avocado salad with salmon
Ingredients:
3 avocados
1 lemon
200 g marinated salmon
2 handfuls of arugula
3 tablespoons of olive oil
2 tablespoons of apple cider vinegar
1 tablespoon old-fashioned mustard
1 bunch of coriander or basil pepper from the mill
Implementation
Open the avocados, remove the stones, take the flesh with a Parisian spoon or a teaspoon.
Arrange the balls in a bowl and sprinkle them with the lemon juice.
Cut the marinated salmon into cubes, add them to the salad bowl with washed arugula and coriander or basil washed and chopped.
Mix oil, vinegar, mustard, salt, pepper and 2 tbsp. water, emulsify the sauce and pour over the salad. Stir gently and serve.
Salad of salmon, buckwheat and avocado
Ingredients
100 g buckwheat
250 g smoked salmon
2 avocados
3 cives
2 tablespoons of olive oil
2 limes bio
Implementation
Cook the buckwheat for 15 minutes in salted boiling water, then drain it. Let cool. Cut the smoked salmon into thin slices.
Peel the avocados and cut their flesh into cubes. Sprinkle with lime juice. Spread the buckwheat in 4 plates. Add salmon and avocado dice.
Rinse and chop the cakes. Mix 2 tbsp. olive oil, 4 tbsp. lemon juice, salt, pepper and chopped cives. Spread on the plates and serve.
